The rolled lamb breast is a wonderfully fatty cut that benefits from a slow roast and will get crispy on the outside while remaining juicy. Our lamb comes from our native-breed Llyen sheep and is born and reared on Rush Farm. All our meat is certified organic, biodynamic and pasture fed, and our animals live happy lives on our species-rich pasture. Access to a diverse range of plants and hedgerow forage means our meat has great depth of flavour, and is the environmentally conscious way to eat meat.
