These steaks are cut from the lamb leg and are a way to enjoy lamb with a shorter cooking time than a whole leg roast. Our hogget comes from our primitive Shetland sheep and is born and reared on Rush Farm. Hogget means an older lamb, meaning more flavour in the meat. This will be a stronger flavour than most lamb, but it is not over-powering in any way. All our meat is certified organic, biodynamic and pasture fed, and our animals live happy lives on our species-rich pasture. Access to a diverse range of plants and hedgerow forage means our meat has great depth of flavour, and is the environmentally conscious way to eat meat.
