Fillet tail is the tail end of the fillet steak, which is the leanest, most tender cut of beef and is perfect for a really special treat. A slightly smaller cut compared to a fillet steak. All of our beef is from our Traditional Hereford cattle who have all been born and reared here at Rush Farm. Our meat is certified organic, biodynamic and pasture fed, and our animals live happy lives on our species-rich pasture. Access to a diverse range of plants and hedgerow forage means our meat has great depth of flavour, and is the environmentally conscious way to eat meat.
