Skirt steak is prized for its flavour rather than tenderness, and is therefore best slow cooked or marinaded for as long as you can manage (up to 24 hrs) before cooking. All of our beef is from our Traditional Hereford cattle who have all been born and reared here at Rush Farm. Our meat is certified organic, biodynamic and pasture fed, and our animals live happy lives on our species-rich pasture. Access to a diverse range of plants and hedgerow forage means our meat has great depth of flavour, and is the environmentally conscious way to eat meat.
